So yesterday someone actually noticed I lost weight. :) Oh how happy that made me to know that someone out there noticed my hard work. (though it hasn't been so good lately)

Buddy Walk

This up coming Saturday, the 25th at Howard Ammon Park there is a Buddy Walk. The Buddy Walk is a fundraiser for the Down Syndrome Association of the Mid Columbia. (DSAMC)

The walk, I believe is one mile and the fee is $10 if you pay in advance or $12 the day of. It is at 11:00am but you would need to be there before that to get your shirt and check in.

I will be attending this with my girls in support of a family in our ward. If you are interested in attending this event then click HERE for more details.

Lettuce Wraps

So I found this recipe the other day, and since I was totally craving PF Changs, (but too cheap to go eat there) I made it last night. It was so yummy and Johnny said it was a nice light dinner. Which in his book is a good thing.

Easy Lettuce Wraps

4 chicken breasts, chopped into bite size pieces
1 garlic clove, minced
1/4 cup celery, diced
1/4 cup carrots, diced
1/2 red pepper, chopped
1 small zucchini, chopped
1/4 cup green onion, chopped
1/4 cup chopped almonds
1 tablespoon teriyaki sauce
1 tablespoon soy sauce
1 teaspoon hoisin sauce (I didn't use this)
salt and pepper
iceberg lettuce leaves


Chop your chicken into bite size pieces. Then cook in a medium high skillet with a little bit of olive oil until cooked through. Then add your veggies. Saute for 2-3 minutes. Add salt, pepper, hoisin, soy and teriyaki. Let simmer for 2 minutes or so to let the flavors incorporate. Scoop a few spoonfuls onto lettuce leaf and top with almonds, and a little hoisin if you like a kick! Enjoy!
